Pipe Fitting types are; Threaded, Welded, Flanged, Mechanical Joints, push on, Gasket,… depending on size, location, application and material of the pipe.
You need to determine the above parameter to find the correct answer.
Besides Adhesives And Welds parts can be joined by any number of different mechanical means (this includes Piping And Flanges)
Fastening devices Fasteners Such as screws Bolts Pins rivets Keys Splines Snap rings, etc.
Crimping
Threaded Fasteners
i will base my answer on the most common piping material, carbon steel. There are two main types of connections when joining carbon steel in straight lengths or fittings. First, you have screw in joints. These are your common fittings you would see at the harware store. Next you have flanged fittings. These require each end of the pipe or fitting to have a flange with the same number of bolts (usually determined by the pressure class of the pipe and fitting) with a gasket between them. To install this type of pipe, you just tighten down each bolt to a certain torque usually specified by the pipe and or fitting vendor. Typically screwed fittings are used when possible. There does become a point around 4″ in diameter where you can not get carbon steel piping with threads and must use flanges.
Your question in quite generic. Sometimes a certain application calls for flanged fittings on smaller pipe or calls for welded connections only. Also, the material type can predetermine the connection type. For instance, PVC has threaded connections and Socket weld connectoins. Threaded fittings are more stable and are used on a higher schedule pipe. Typically for schedule 40 PVC you would use a solvent and a glue to just “weld” them together.
The connection type you use depends on the pipe size, pipe material and application.
